Overview

At the highest calf market in the country, we procure the best calves and raise them individually in separate enclosures, thoroughly managing their health. While it is common to ship calves within approximately 22 to 32 months, we do not ship them unless they have been raised for a minimum of 35 months. On average, it would be around 38 months. By extending the rearing period, the meat becomes rich in unsaturated fatty acids, even if marbled, it does not cause indigestion, and it becomes tender, delicious meat. Furthermore, the melting point of the meat decreases, allowing it to melt in the mouth at a lower temperature, resulting in a pleasant and smooth texture.
